Chocolate Covered Peeps

Regular peeps, I can take them or leave them.  But chocolate covered peeps?  Now, those are yummy!

My helpers were pretty heavy-handed on the sprinkles!

The kids and I tried our hand at chocolate coating some marshmallow bunny peeps.  We had fun dipping and sprinkle shaking, and now we have some cute little treats for this Easter weekend.  ( Of course, we each had to try one first, just to make sure the quality was good enough to serve on Easter!)

I have one of these handy little electric chocolate melters so it's really easy to do with the kids.  I don't have to worry about taking a hot bowl out of the microwave and the chocolate stays at the right consistency for as long as it takes each kid to have a turn.

1.  We just put the lollipop sticks into the bunny peeps ~ much to my son's delight , " Haha, we have to stick it in his butt!" then fits of giggles from all the kids! :)

2.  Then I helped dip the bunnies in the melted chocolate.  We found that it worked best to spoon the chocolate over the bunnies, then gently shake off any excess.  At first, we were dipping the whole peep in the chocolate, but that softened up the marshmallow too much and it started to fall off the stick.  (Our peeps were also really fresh, so ones that are more stale might withstand dipping a little easier).  Also, I recommend making sure the chocolate covers the bunny's "butt" where the stick is ~ it helps make sure your bunny stays on the stick after it cools.

3.  Next, we put the covered bunnies on some waxed paper and shook on the sprinkles.

4.  That's it!  Just wait for them to cool and you're all set.  (Oh, and I'm sure dipped peep chicks are just as tasty, but I thought the bunny's shape would be more recognizable when covered with chocolate.)
