When we made our yummy Cake Mix Waffles, I knew they'd be perfect for ice cream sandwiches. We got the great taste combination of cake and ice cream, but because we made our "cake" in the waffle iron, we didn't have add any more heat to our summer day by turning on the oven.
They were so easy, I really don't even need to give directions, but here they are:
1. Allow your cake mix waffles to cool on a baking rack, then put them on a cookie sheet in a single layers with waxed paper in between. Put them in the freezer to get a bit colder and a little more firm.
2. Take out your ice cream and allow it to soften slightly so it's easily scoopable and spreadable.
3. Scoop out some ice cream and spread it on your waffle, then add another waffle to make your sandwich.

OK the kid who loves waffles in my house is actually my dear husband, and coincidentally, he has been asking when I'm going to make cupcakes again. Why oh why do I need someone else to tell me when you can put two things together?? LOL! And hello, adding a THIRD wonder in ice cream, brilliant!! ReplyDeleteNot a silly question at all. It's about as long as you'd cook a waffle. My waffle maker has a little green light that comes on when it's ready, but I usually just open the lid after a little bit to see and lift up a corner to see if it seems done.

ReplyDeleteI haven't froze these for a long time, but only because we like to eat them all right away! :) However, since I know you can freeze regular cake (and regular ice cream, obviously), I don't see why it wouldn't work.

ReplyDeleteI am going to try to make the cake mix with a Diet Coke and a couple of egg whites. (The only way I make a cake mix anymore). Then I will fill it with fat free Cool Whip and freeze. These will be weight loss friendly if it works.

ReplyDeleteI think this is a super Idea. Can't wait to try it with my granddaughter. You could add chocolate chips to ice cream or coconut or smarties or nuts OMG this sounds like fun. Even fudge sauce.
ReplyDeleteI swear I bought a chocolate cake but couldn't find it, I did however have a strawberry cake so I used it and they were AWESOME!! My kids loved them and they didn't last long in the freezer!!
ReplyDeleteHere is a little hint...... Instead of trying to spread the ice cream on the waffle, get one of the paper cartons of ice cream, open it up all the way, and slice it with a knife. It makes perfect slices you can just plop onto the waffle, you can make it as thin or as thick as you would like!

We made these tonight but we put homemade buttercream frosting in the middle instead of ice cream! BIG BIG HIT!

ReplyDeleteAn old friend of mine used to make these back in the early eighties.. She would buy the ice cream in the rectangle boxes and just slice the ice cream like bread and put between her waffles then wrap them well in Saran wrap.. Kept them on hand for after church get togethers on Sunday evenings... Miss those days, must do this for my husband now

DeleteHey! Sorry for the delayed reply. I just don't think I'm that good with a waffle maker. The chocolate cake kept sticking to the waffle maker and it kept coming off in chunks! This happens to me sometimes also when I am making waffles. I don't know how to fix this!
DeleteI made these last night except used brownie mix instead of cake mix and because there didn't seem to be enough calories, drizzled caramel on top (but I kept the brownie-waffles warm). OH MY GOODNESS - I am thankful I wasn't privy to this receipe when I was pregnant.
