Homemade Soft Serve Ice Cream

A friend shared this recipe with me (thanks, Judy!) and boy was it a hit! Tastes just like soft-serve ice cream. Our freezer always gets things really frozen, so after several hours, ours was pretty hard and scooped just like regular ice cream, with the flavor of soft-serve. I really enjoyed making it because it was inexpensive (less than $5 for at least 8 kid-sized cones) and didn't require anything fancier than a hand mixer to make.

1 pint (2 cups) heavy whipping cream

1 can sweetened condensed milk

1 tsp extract (vanilla, almond, your favorite)

DIRECTIONS: With an electric mixer, beat the whipping cream until thickened into a soft cream. Add the sweetened condensed milk and extract and mix until thoroughly combined. Pour it all into a plastic container and freeze for at least 4 hours, or longer.

  2. How much ice cream does this yield? Is it almost 4 cups or does the whipping cream expand when you whip it? Thanks for great ideas!! I just wish you'd have started this sooner in the summer! :)

  3. Jen, we started eating it before I thought to measure it out! :) I'd estimate at least 4 cups or so. I can tell you that we got 8 small cones out of the batch so far, I took a few bites straight out of the container while scooping it out, and there's still a little bit left (maybe 3 more small cones worth?)

    I do still have the ingredients to make another batch, so I'll try to remember to measure before I start eating next time!

    As for starting this earlier in the summer, I'm not organized enough to do something smart like that! ;)

  4. I substituted whipping cream with fat-free half and half milk and used fat free condensed milk. The soft serve came out real good. Thanks for the great recipe!
