INGREDIENTS:
1 pint (2 cups) heavy whipping cream
1 can sweetened condensed milk
1 tsp extract (vanilla, almond, your favorite)
DIRECTIONS: With an electric mixer, beat the whipping cream until thickened into a soft cream. Add the sweetened condensed milk and extract and mix until thoroughly combined. Pour it all into a plastic container and freeze for at least 4 hours, or longer.
(and, even though it's not even remotely diet-friendly, Mom enjoyed one too!)

ReplyDeleteHow much ice cream does this yield? Is it almost 4 cups or does the whipping cream expand when you whip it? Thanks for great ideas!! I just wish you'd have started this sooner in the summer! :)
ReplyDeleteJen, we started eating it before I thought to measure it out! :) I'd estimate at least 4 cups or so. I can tell you that we got 8 small cones out of the batch so far, I took a few bites straight out of the container while scooping it out, and there's still a little bit left (maybe 3 more small cones worth?)

As for starting this earlier in the summer, I'm not organized enough to do something smart like that! ;)
I substituted whipping cream with fat-free half and half milk and used fat free condensed milk. The soft serve came out real good. Thanks for the great recipe!
